In honor of the opening ceremonies tonight, we thought we would do a traditional recipe from London.  We enlisted the help of my brother-in-law, Brian, who traveled there regularly for business.  He mentioned fish & chips, bangers & mash or shepherds pie…but the recipe that stood out the most to us was a Bacon Butty Sandwich.

Traditionally, the Bacon Butty sandwich is literally just the bacon on bread topped either with ketchup or brown sauce.  We didn’t want to stray too far from the traditional recipe, but we did decide to put a little Extraordinary twist to it.

On the Grill

Of course, I had to smoke the bacon.  This is Canadian Bacon, by the way.  The traditional recipe calls for Back Bacon…which is the same as Canadian Bacon to us Yankees.

I smoked it with apple wood chips, indirect, for about 10 minutes.  This definitely added a yummy smokey taste to this sandwich that I loved.

Once I was done with the bacon, I quickly buttered and grilled some french bread for that extra crispness.  Then of course, Patti came up with a silly delicious Chipotle Mayo that was offensively tasty.  Delicious enough to eat with a spoon, but provided a back of the throat kick that left you wanting more – and a drink of water.

Put it all together and you have an Extraordinarily delicious British-American Bacon Butty Sandwich!

Bacon Butty with Chipotle Mayo

A classic sandwich with a little bit of kick!

Ingredients
  

  • Back Bacon Canadian Bacon
  • French Bread

For Chipotle Mayo

  • 1/2 tbs chipotle in adobo sauce chopped.
  • 1/4 cup mayo
  • Mix 2 ingredients together well.

Instructions
 

  • Set up your grill for indirect cooking.
  • Place the Bacon away from heat in a single layer on your grill.
  • Smoke for 10-15 minutes until golden brown.
  • Slice a loaf of french bread to your desired sized sandwich.
  • Butter thoroughly and place directly above coals for 5 minutes until brown and crispy.
  • Layer one side with Chipotle Mayo, the other side with Bacon, close, eat, and enjoy!
