Below for your reference is a general temperature chart for different types and cuts of meat.  This is somewhat flexible of course, but a good basic guide.

You have a food temp guide here, but what about BBQ meats? Brisket temp at 145? Thats not BBQ temp.

Arnold – this is a GRILLING food temp guide – not BBQ. BBQ is a whole different ball of wax. I have individual recipes that talk to the internal temps of each of the traditional BBQ meats. Check out the recipes for more details. Brisket…is anywhere between 180 – 200, depending on what type of tenderness you’re looking for.
