Leftover Chicken Cesear Pita

Original Recipe: Smoked Whole Chicken

There are many times when I open my refrigerator and wonder, “So…what am I going to do with this leftover chicken?”  This recipe was born when one day the chicken was sitting next to a Caesar Salad Kit. I thought, surely this two would get along together well in a pita.  And you know what?  They do – they get along wonderfully! 

The best part:  It’s CRAZY easy!  Like, you don’t even have to use a stove/microwave/grill easy!  So whether it’s leftovers from your whole chicken, chicken breasts, or chicken thighs, try this recipe out SOON and enjoy the heck out of it.

Leftover Chicken Cesear Pita Recipe

BBQ leftovers: Chicken Caesar Pitas

BBQ leftovers: Chicken Caesar Pitas

Smoked leftover chicken mixed with ceasar salad and mozzarella cheese in a pita or tortilla. Yum.


  • 1 Caesar Salad kit (Dole variety is my personal favorite)
  • 1 cup leftover smoked chicken
  • Extra mozzarella cheese(1/2 cup ish)
  • Pitas or soft tortillas


  1. Follow the directions on the Caesar Salad Kit bag(do people really do that? Just rip it open and mix it all together). EXCEPT I don't add the croutons to the pita sandwich.
  2. Place some of the mixed salad in the pita.
  3. Add some mozzarella cheese.
  4. Add the chicken.
  5. I also crack some fresh ground pepper over the whole thing - just because it reminds me of a restaurant then.
  6. You will be amazed at how yummy this is!
