So I decided I wanted to do a quick post today in celebration of Cinco de Mayo, but when I sat down at my computer I thought, “What in the world am I going to write about?” Then I started breezing through some of the recipes we’ve done and realized just how many Mexican themed dishes we’ve prepared on Extraordinary BBQ. So let’s plan your dinner tonight, using your grill!
First, the appetizers. You have to start with guacamole, so why not Grilled Guacamole? Super easy and fun. While you’re grilling those avocado’, you’ll also want some Salsa with grilled corn, avocado and cilantro for your guests. Still not enough? Ahhh…you need cheese. How about some Roasted Red Pepper Cheese Dip on your table. Yea, that’s a good idea. If you’re still not satisfied, have some leftover smoked meat and need to satisfy your BBQ craving, then go for some Pulled Pork or Chicken Nachos. It’s in my top 5 of favorite BBQ snacks.
Next, the side dishes. I’ve got a few tasty options for you. Simple and tasty, Mexican Black Beans are always a hit. Since you’ve got the black beans out already, why not try something REALLY different and try our Quinoa with Mexican Black Beans. If you’re looking for something you and the kids will enjoy, try some Grilled Quesadillas. There are dozens of ways to make them – mix and match taste buds for all your guests. The quesadillas will need some Mexican Style Grilled Veggies so you might as well get those done. They can be used on any number of these dishes. Lastly, no meal is complete without some sort of salad. So let’s try some Grilled Corn Salad. Feel free to kick it up a notch if you so desire.
Now for the main course. We’ve got some options here that are silly good. Good luck deciding which to do. If you have steak on hand, a fast and tasty choice would be either Grilled Steak Fajitas or Grilled Steak Burrito. Or you could create Mexican Steak and have a crazy good Taco Night! Mmmm. Steak.
Speaking of Tacos…perhaps you’re a bit on the healthy side? Want something other than meat? Done. Try Salmon Soft Tacos or Fish Tacos with Black Bean and Mango Salsa. Both are excellent non-meat options for your Mexican themed dinner.
I’ve got two more options for you. The first is Grilled Santa Fe Pizza because, well, it’s pizza. There are probably 50 different varieties you could think up for a Mexican style pizza, so get creative and have fun. Pizza is fun.
The last choice is my favorite. It’s unique. It’s authentic. It’s placed in the top 10 at the World Championship of BBQ in Memphis for Exotic foods. It was created by my cousin and his Venezuelan wife. It’s my favorite item in this entire post and it is beyond glorious: BBQ Empanadas. If you haven’t tried them – try them. If you’re looking for something fun and new – try them. If you want my opinion on which thing to try if you have the time – try them.
