Creamy Smoked Salmon Salad

So far, I have yet to find a way that I don’t love salmon.  This creamy salmon salad is DELICIOUS.  I ate it as a lettuce wrap, I ate it with crackers, I ate it atop cucumber slices – it’s just good.  It just is.

We bought a huge fresh salmon fillet at Sam’s the other day and Kevin smoked it.  After eating it for dinner, I divided the rest out into portions for a few different leftover ideas.  This was a huge hit and one that I will be looking forward to again when we do another salmon…hopefully soon!
