Grilled Flank Steak Salad {Balsamic and Feta!}

This salad pairs flank steak that was grilled after soaking in a Balsamic marinade with greens, feta, cucumbers and tomatoes topped with a  freshly made honey garlic Balsamic vinaigrette.   We are talking about a relatively healthy flavor explosion!

One could definitely argue that when you add flank steak to salad, it’s no longer a “healthy” salad.  I would not argue with that person.  Instead, I would take a big bite with a huge smile on my face.

Because it’s just that good.  Really.

However, here’s a scenario I have playing in my head: husband wants steak, wife agrees disdainfully.  Or at least acts like it’s disdainfully, because no one actually DOESN’T want steak.  You may feel guilty for eating it, or it may be totally off your diet, but let’s be honest, you still want it.

Anyway, back to scenario.  Wife agrees, but only if she has it on a salad.  Husband totally agrees on that – she can have it on a salad, he can have it his way (yes, just like at Burger King).  Steak is grilled to perfection – mouth-watering juiciness just oozing from it, wife is inside preparing said salad. After the appropriate steak wait time, steak is being sliced thinly.

While husband goes inside to get his side dishes, wife carefully dishes out the steak, and very very carefully puts more steak on her salad than on his plate.  She hides it under lettuce, under carrots – any hiding places she can find.  Husband comes back, none the wiser.

Each eat their meal in happy bliss.  TOTAL fictitious scenario.  I’m serious.  I’m not at all saying that’s what happens here…

Anyway, try this salad.  I promise it won’t disappoint.  This salad is best with a freshly grilled flank steak but using leftover smoked flank steak is incredibly awesome.

Ingredients
  

  • 1 1/2 cups spring lettuce
  • chopped tomatoes
  • 1/4 cup feta cheese
  • sliced cucumber
  • shredded carrots
  • Some...sliced flank steak. You can judge how much....
  • Balsamic Salad dressing:
  • 2 tbn honey
  • 1 crushed garlic clove
  • 1/3 cup balsamic vinegar
  • 1/3 cup vegetable oil
  • salt and pepper to taste

Instructions
 

  • Create your salad as you normally would.
  • Add all salad dressing ingredients into an airtight container(or a dressing container) and shake well. Pour the dressing over the salad. Make sure to put the steak on before putting the dressing on - you want the steak to get that flavor as well.
