A New Year brings new resolutions, right? I think most start out the year with great intentions of eating healthier or exercising more – or maybe you have other resolutions you’re working on. But this is a BBQ blog, a food blog…so I’ll focus on food.

We have plenty of healthy recipes on this site. Search around and you’ll find great Seafood, chicken, turkey and veggie recipes. So if you’re like my wife and I, and you’re trying to focus on healthier eating without sacrificing too much flavor – you’re in the right spot.

Sautéed Spinach on Grill
This recipe is no exception. Very healthy and full of flavor. Ground white meat chicken, sauteed spinach, and light bleu cheese dressing. Total healthy yumminess and super fun to make. I love using my cast iron skillet on the grill whenever possible, so this recipe gave me another excuse to do so.  This would also be an excellent candidate to become an amazing smoked burger!

Credit for this recipe goes to my buddy, Wes – he of Smoked Honey Bourbon Chicken Wing fame. Dude knows chicken. This is actually the very first meal he grilled for me at his house. He was so nervous to grill something for a guy that has a blog about grilling. We laughed quite a bit that evening, and of course ate very well. Since then he has become one of my very best friends and best foodie friends to share and create recipes with. I have zero doubt this will not be the last post I write about a recipe Wes helped create.

I have every confidence you will enjoy these Grilled Chicken Burgers with Blue Cheese Dressing as much as I did when Wes prepared them for me. So here’s to resolutions, eating healthy, tasty grilling, and friendships created and connected with food.

Grilled Chicken Burger with Bleu Cheese Dressing

Prep Time 15 minutes
Cook Time 25 minutes
Total Time 40 minutes

Ingredients
  

Chicken Burger

  • 1 pound of ground chicken
  • 1 pound of spinach - sauteed/grilled
  • salt and pepper to taste
  • 7 cloves of smoked roasted garlic

Low Fat Bleu Cheese

  • 1/3 cup of bleu cheese
  • 1 cup greek yogurt
  • 1 tbs finely diced shallots
  • 1 tsp shallots
  • 1 tsp finely chopped cilantro
  • salt and pepper to taste

Instructions
 

  • Set up your grill for direct cooking. You're going for a med-high temp.
  • Saute the fresh spinach until it gets limp.
  • Combine all ingredients for the chicken burgers.
  • Grill at 300 - 350 for 3-5 minutes on each side, or until internal temperature reaches 165.
  • Combine all ingredients for bleu cheese dressing. You can prepare this ahead of time, and it stays good for 5 days in the refrigerator.
  • We used a whole wheat bun for an extra healthy punch.
