Shrimp.

So good. So simple.

I haven’t done much shrimp lately. The price of shrimp went crazy high over the past year and I’ve missed it. My good friend Mike had my family over for a shrimp boil after his trip to Louisiana and it reminded me exactly how much I love shrimp (especially Cajun Shrimp!).

I decided it was time for shrimp and I to find each other again.

Of course it always helps when inspiration finds its way into your inbox. I saw this recipe in the ever delicious blog, Grill Girl, and adapted it a bit. Robyn always posts the most delicious recipes. I saw this one and immediately thought – Superbowl. (or any party, but Superbowl Sunday – the ultimate winter food party – happens to be just around the corner)

We decided to add in some of our favorite seasoning from Ellbee’s.  For this particular dish, I used the chili lime seasoning.  Those flavors really complimented the shrimp.

I like finding recipes that are delicious and quick to grill during the winter months – AND it’s healthy! I love grilling, but when we have freezing temps in St. Louis, I don’t need to stand outside for hours. A few minutes by my grill is plenty. With a total cook time of about 5 minutes, this one fits the bill.

Plus there’s the pineapple. Have you tried grilling pineapple yet? WHY NOT? It’s glorious. Try my Grilled Sweet Pineapple Slices as a compliment to any grilled meal. Only takes a few minutes to cook and oh so tasty.

Pineapple really lends itself well to shrimp as well. That, combined with some basic flavors on the shrimp, make these Shrimp and Pineapple Kabobs an awesome treat.

Grilled Pineapple Shrimp Kabobs

The flavors are perfect compliments after being kissed by fire and smoke!

Ingredients
  

  • 2 lbs fresh shrimp
  • 1 tsn of chili lime garlic seasoning
  • 1/4 cup of extra virgin olive oil
  • sea salt + freshly cracked pepper to taste
  • 1/4 cup of fresh parsley finely chopped
  • 1 lime use the zest as well
  • 2 cups of fresh pineapple if you don’t have fresh frozen will work, canned pineapple won’t as it’ll break down once grilled

Instructions
 

  • Set up your grill for direct cooking. Aim for a temperature around 300-350.
  • Peel and devein your shrimp.
  • In a large bowl season your shrimp with salt and pepper, the juice of two limes and the zest of one, seasoning, and fresh parsley.
  • Skewer your shrimp and pineapple. Brush each skewer with olive oil before setting it on the grill.
  • Grill each side for 2-3 minutes, or until they turn bright orange in color.
  • Before turning your skewers make sure you brush the other side as well.
