Kevin,
I love the site and use as a resource often.
I recently returned from a trip to Jamaica and
came back inspired to tackle Jerk Chicken.
Do you have a recipe? Any thoughts?

I have a question for you. I was thinking about smoking some chili and was wondering if you have every tried it and if so had a good recipe for that.

Ron – yes, I have smoked chili for competitions with varied success. Be careful you don’t get your chili TOO smokey. I have found success when just smoking the meat that goes in the chili – ground beef, brisket, whatever – then mixing together with rest of your normal ingredients. I’ve also added BBQ Sauce…that’s pretty good too.

Kevin,
That is what I ended up doing I just smoked the meat put some of my rub on it and smoked it for 4 hours then dumped it all into a crock pot and let it slow cook all night and had it the next day. It turned out really good so that will be a repeat recipe. Thanks for the response back.

That’s great to hear, Shauna! And yes, Ribs are what me and my team – SLABS a’ Smokin – do best. We actually took 2nd place at the Memphis in May World Championship in 2011 with Ribs. I will share a fantastic recipe soon – in an EBOOK! I’m in the process of writing it now and will let everyone know as soon as it’s ready. Thanks so much for your interest!
