The time honored debate: Flip once, or flip multiple times. Everyone I talk to has an opinion and reasoning behind it. I recently saw this article on Lifehacker and find it very interesting. It speaks to the logic of why flipping multiple times makes more sense than only flipping once.
What do I think? I think I have to try both side by side to test the results. Here is MY logic: Every time I flip, I see juices on my steak/burger that are being flipped directly on the fire. So why would I want to flip those juices away? I’m no scientist, so I can’t speak to the points about what happens internally to the meat when you flip. I’m just an observer and don’t like seeing sweet juices pouring off my meat onto the coals, causing flames.
I like to see those juices sitting on my plate.
Also, my cousin Tim made a great point – if you’re keeping the lid on, both sides are cooking so there’s no need to flip. With my Weber, or any hot grill with a lid, when you close the lid it’s trapping the heat, thus cooking the top side as well. Further reason to flip only once.
